• One of fresh grouper (mahi-mahi, red snapper, cod, and halibut are all good options as well)
• Two quartered limes
• ¼ cup of minced cilantro
• Salt to your liking
• Black pepper, freshly grounded
• Two tablespoons of canola oil
• ¾ cup of shredded red cabbage
• ¼ cup of red onions diced
• Eight corn tortillas
• One diced avocado
• One diced peach
Dry both sides of the fish by patting them down with a paper towel. Season the fish using salt and black pepper. In a large frying pan, heat the olive oil over medium-high heat. Before you start cooking the fish, make sure that the fish is completely dry and that the oil is hot. This ensures that the fish will not stick to the pan.
