• One of fresh grouper (mahi-mahi, red snapper, cod, and halibut are all good options as well)
• Two quartered limes
• ¼ cup of minced cilantro
• Salt to your liking
• Black pepper, freshly grounded
• Two tablespoons of canola oil
• ¾ cup of shredded red cabbage
• ¼ cup of red onions diced
• Eight corn tortillas
• One diced avocado
• One diced peach
Dry both sides of the fish by patting them down with a paper towel. Season the fish using salt and black pepper. In a large frying pan, heat the olive oil over medium-high heat. Before you start cooking the fish, make sure that the fish is completely dry and that the oil is hot. This ensures that the fish will not stick to the pan. When the oil is hot enough, add the fish, flesh-side down, and cook each side for three to five minutes. Now remove the fish and cut it up into eight equal portions.

Heat up the tortillas for three minutes in the oven at 350 degrees. Now start assembling the tacos. Each taco should have fish, cabbage, onion, cilantro, peach, avocado, and squeezed lime juice.
