A healthy quiche is a platform for a delicious brunch. Besides the fact that it's healthy, quiche is easy to make, is filling, and the ingredients won't cost you too much. Here are the ingredients that you will need.
• Cooking Spray
• Two tablespoons olive oil
• ½ a teaspoon nutmeg
• One cup fat-free half and half
• ½ a small diced onion
• Two cups sliced and salted mushrooms
• Four eggs
• Two cups shredded kale leaves
• ½ of a sliced red pepper
• Salt to your taste
• Ground black pepper to your taste (freshly ground is preferable)
• Two cloves minced garlic
Grease a 9-inch pie pan with the cooking spray and preheat the oven to 375 degrees. In a sauté pan, heat the olive oil over medium heat. Cook the onions in the sauté pan for about two or three minutes, or until the onions are clear but not browning. Add the mushrooms to the ovens and cook for eight to ten minutes. Stir the sauté pan occasionally and season the onions and mushrooms with salt and pepper. Add the garlic and red pepper and cook for an additional three minutes. After three minutes, add the kale and cook for two minutes or until the kale has wilted. Once the kale has wilted, remove the pan from heat.

Whisk the eggs in a medium-sized bowl until the eggs are fluffed. Add the half and half, salt and pepper, and nutmeg and whisk together. Place the cooked vegetables in the greased pie pan and pour the egg mixture on top of the vegetables. Bake for about 30 to 35 minutes or until the edges are a light golden color. Serve the quiche warm.
